Another episode of “Will It Egg Roll?” Air Fryer Egg Rolls with Brisket and Mac episode, which is another leftovers recipe. We load up wonton wrappers with leftover brisket and gooey mac and cheese before dropping them in an air fryer. This simple combo is roll-your-eyes-back and curl-your-toes good.

Will it Egg Roll?

Our good buddy Brad introduced us to the glorious world of fusion egg rolls. Instead of the traditional pork and cabbage, we try all manner of different ingredients. The first one was inspired by these Big Mac Tacos on our parent site GrillinFools.com. Combining a Big Mac with a taco was a HUGE success so we decided to see if a cheeseburger would make a good basis for an egg roll. So the question became, “Will it Egg Roll?” And the Cheeseburger Egg Roll most certainly did.

Our next two installments also come from the world of grilling and BBQ.

This one is a classic pairing of brisket and macaroni and cheese. And our next one will feature BBQ Pork.

I know a lot of people, myself included, save leftover brisket for a pot of chili come fall or winter (dutch oven brisket chili, anyone?), but the Will-It-Egg-Roll series is an awesome repository of leftover recipes.

If you are looking for other clever air fryer recipes, then we can help.

Or if you are just looking for inventive appetizers, we can help there also. Although there will be some overlap between the two.

Assemble the Air Fryer Egg Rolls

First, lay out 6 of the wonton wrappers on a cutting board.

Batches of 6 work best

I know the recipe calls for 12 and some of you are thinking, “Why not knock them all out at once?”

Because if your air fryer is anything like mine, it will only hold 6 (barely) at a time. So while the first batch are cooking, then prepare the second batch.

Right in the middle of each wonton wrapper put 1 – 1.25 ounces of macaroni and then top that with 1 – 1.5 ounces of leftover brisket:

Several square wonton wrappers laid on a white cutting board each topped with macaroni and cheese and chunks of beef ready to be folded up into egg rolls and placed into an air fryer
Load them up but not too heavy

When loading up the wontons, don’t overload them. You need plenty of room to fold up the wonton. We can’t have any of the inner ingredients exposed to the outside when they are cooked or the egg roll can rupture.

TLDR: make sure there’s plenty of room around the outside of the brisket and mac to fold up the wonton properly.

Fold the Wontons

Before folding, gotta apply the adhesive. Stick the end of your finger into a cup of water and then run that wet finger along one side of the wonton wrapper. Repeat the dipping and running the wet finger along a side three more times until all four edges are a little wet.

Then, fold the sides in so the corners overlap a little:

Fold the corners on each side in

Overlap the corners just a bit

Next, using your index finger, pin the two corners from the sides that were folded so they stay in place and fold one of the other two sides over the top, forming a pouch:

Fold the third side over

Now, take pouch formed from the three sides being folded in and roll it toward the final side:

And done!

Voila

Now do that 5 more times for this batch and then 6 more times for the second batch while the first batch air fries.

Speaking of cooking these bodacious bites… Time to bust out that air fryer

After the 7 minutes (plus the flip) is done, remove from the air fryer, and serve. Drizzle of BBQ sauce optional.

Air Fryer Egg Rolls with Brisket and Mac Summary

I like to serve these with a variety of dipping sauces. We actually found that a combo of traditional tomato based, Alabama white and Carolina gold BBQ sauces really was amazing. Although, some ramekin bowls with the different sauces allows for dipping in whatever flavor you might be hankering for with each bite, is also an option.

And to answer the question, it will, indeed, egg roll!

Cuisine: American, BBQ, Chinese, Fusion

Ingredients

  • 12 Wonton wrappers
  • 1 lb Leftover brisket
  • 1 lb Macaroni and cheese
  • Spray olive oil
  • BBQ sauce for garnish and dunking

Equipment

  • Air fryer

Method

  1. Lay out 6 wonton wrappers and top the middle with 1 - 1.25 ounces of macaroni and cheese, and 1 - 1.5 ounces of brisket, leaving a good amount of space around the edge of the wonton wrapper to seal up the egg roll
  2. Wet the end of your finger and run it along the edge of one side of the wonton wrapper. Repeat for the other three sides.
  3. Orient the wonton wrapper to be a diamond and fold in the two sides so the corners overlap just a bit. Use your index finger to pin those two corners down while you bring a third side in to form a pouch. Then roll the pouch made from the three sides folded to seal off the egg roll with the forth side acting like the flap of an envelope. Repeat 5 more times.
  4. Place the uncooked egg rolls into the air fryer basket and spray the top with the olive oil. Set the air fryer to 375F and 7 minutes. Insert the basket into the air fryer. After 3.5 - 4 minutes, remove the basket and flip the egg rolls over to brown the other side and then slide the basket back in for the remaining time.
  5. When the timer runs out, remove the egg rolls from the air fryer and serve with the BBQ sauce as a garnish or for dipping.
