A ribeye steak seared in a cast iron pan and basted with garlic and herb butter. This butter steak recipe is finished in the oven and just might be the best steak I’ve ever eaten.

Herb Butter Steak Recipe

OK, truth be told, this was supposed to be garlic and herb butter steak recipe, but I went shopping for the ingredients and came home assuming I had the garlic cloves only to find none. See, I’d used the last of my garlic in this other butter basted steak cooked in cast iron.

Ironically, in that other recipe, I was unable to find any good fresh herbs so I skipped them.

Indeed, it looks like I’ll be doing the same here with the garlic cloves.

Other equipment needed:

  • Oven safe pan (cast iron works really well)

How to Cook this Herb Butter Steak Recipe:

Preheat the oven to 350F and warm up an oven safe pan to medium to medium-high heat (350F-400F). While the oven and skillet warm up, season the steak on both sides with salt, pepper and garlic (SPG) and place in the pan once the pan comes to temp. Sear on both sides (3-5 minutes each) and then drop in the butter and herbs and place the pan in the oven. After five minutes, flip the steak. Keep flipping every few minutes until the steak hits your desired temp. Remove from the oven, allow to rest 3-5 minutes and serve.

Preheat the oven to 350F and crank up a burner on the stove to medium to medium-high (350F-400F) and then place an oven safe skillet on the burner.

Season the Steak

To begin, hit both sides of the ribeye steak(s) with the SPG seasoning:

Once the skillet comes to temp, place the steak in the pan:

Sear the steak on each side 3-5 minutes.

We are just looking for some browning on each side.

Then, remove the steak from the skillet and add a stick of butter.

Once the butter melts, drop in the fresh herbs:

We used fresh thyme and sage. I wanted rosemary, but couldn’t find any.

Oregano isn’t bad either

Once the butter is melted and herbs added, drop the steak in the pan:

After 4-5 minutes, flip the steak and close the door for another 4-5 minutes:

Then, check the temp to see if it has reached your desired doneness.

Additionally, here’s a handy steak doneness guide

Steak Temps

  • Rare Steak Temp: 120F-125F
  • Medium Rare Steak Temp: 130F-135F
  • Medium Steak Temp: 140F-145F
  • Med. Well Steak Temp: 150F-155F
  • Well Done Steak Temp: 160F or more, but seriously, just order the chicken

If the steak is not done to your liking yet, keep flipping every 2-3 minutes.

Keep temping until it hits the temp you prefer.

Once the steak is to the proper temp, remove from the oven and the pan and allow to rest for 3-5:

Additionally, a little fresh herb action to garnish the dish and some red wine to garnish the cook:

Also, notice the butter on the plate?

Don’t throw that herb butter away.

Drizzle some of that flavored butter over the top of the ribeye:

Herb Butter Steak Recipe Recap

As someone who makes a living cooking over fire, I must say that this may be the best steak I’ve ever had. If it isn’t it’s darn close. It could’ve been improved with a couple cloves of garlic and cast iron would’ve gotten me a little better flavor crust. It blows my mind that I know this recipe could be improved upon.

This is as quick and easy as it gets. Instead of sticks of butter, I used a homemade garlic butter compound. The flavor is out of this world good!
