Episode 3 of “Will It Egg Roll?” brings us another leftovers recipe: Pulled Pork Air Fryer Egg Rolls. We take all the fixings from a backyard BBQ and toss it into a wonton wrapper and fry it up in an air fryer. We’re talking leftover pulled pork, a little creamy coleslaw and maybe some BBQ sauce. Simple, quick and phenomenal.

Here at CookinFools.com, we are an offshoot of the parent site, GrillinFools.com. The inspiration of “Will It Egg Roll” was the Big Mac Taco we did over there. Non traditional ingredients in a taco forming a fantastic fusion of flavors.

So after combining a cheeseburger and a taco, we decided to combine a cheeseburger with an egg roll. It was a huge hit. We followed that with Egg Rolls made with leftover Brisket and Macaroni. Another huge hit.

Which brings us to this one. If brisket and macaroni, leftovers from a Sunday BBQ, can be so good, what about pulled pork and coleslaw?

Ingredients for Pulled Pork Air Fryer Egg Rolls

  • 12 wonton wrappers
  • 1 lb leftover pulled pork
  • 1 lb leftover coleslaw
  • Spray olive oil or avocado oil (regular olive oil and a silicon brush would work too)
  • BBQ sauce for garnish and/or dunking

Ingredients

Lay out six wonton wrappers and place 1 – 1.5 ounces of leftover pulled pork and 1 – 1.25 ounces of leftover coleslaw on each one:

Optional Step ~ Add a drizzle or dollop of BBQ sauce right here is really good.

Make sure to leave a lot of space around the edge to be able to completely envelope the BBQ pork and cole slaw with the wonton wrapper.

Some are wondering why we don’t just make all 12 egg rolls right now. Because your air fryer probably only takes about 6. So, while the first batch are cooking, prep the other 6.

Grab a cup and fill it with a few ounces of water. Wet the tip of your finger and run some water around each side of each wonton.

Roll the Wonton Wrappers Into Egg Rolls

I’m going to use the pics from the brisket and macaroni egg rolls because they show the process better than the pics for this cook and the ingredients don’t matter when rolling up the egg rolls.

Fold the two sides till they overlap just a tad:

Overlap the corners just a bit

Use one finger to hold those two corners in place and fold a third corner over until that corner overlaps the middle a little bit:

Form a pouch

Now take that three sided pouch full of pulled pork and coleslaw and roll it up over the fourth corner:

Repeat that five more times and spray both sides of the egg rolls with avocado oil or olive oil.

Time to Make some Air Fryer Egg Rolls

Prepare the air fryer by turning it on to 375F and setting it to a cook time of 7 minutes.

Drop the oiled egg rolls into the air fryer basket and insert the basket into the unit:

While these are cooking, prep the second batch.

Also, after 3-4 minutes, remove the basket from the air fryer. The tops of the egg rolls should be browned and crispy.

Flip the egg rolls over with tongs so they brown and crisp up on the bottom:

Please use tongs to do this. They are hot.

Then slide the basket back in for the remaining time which will brown and crisp the other side of the pulled pork egg rolls

Then remove and either drizzle with your favorite BBQ sauce or set out little bowls (ramekins) with a variety of sauces to dunk (or both):

Pulled Pork Egg Rolls Recap

As you can tell, we are huge fans of air fryer egg rolls. The only debate is what to put in them. This backyard BBQ version of air fryer egg rolls are fantastic. I think the lesson here is to get creative. BBQ pork, brisket and macaroni, hamburger and cheese are all fantastic. Go with what you have and don’t be afraid to try something new. Also, stay tuned for more inspiration from us on whether it will egg roll or not.

Cook Time 15 minutes

Cuisine: American, Asian, Barbecue, BBQ, Chinese, Fusion

Ingredients

  • 12 Wonton wrappers
  • 1 lb Leftover pulled pork
  • 1 lb Leftover coleslaw
  • Spray oil
  • Your favorite BBQ sauce(s) For garnish and/or dunking

Equipment

  • Air fryer

Method

  1. Lay out six wonton wrappers on a cutting board. Add 1 - 1.5 ounces of pulled pork and 1 - 1.25 ounces of coleslaw to the middle of the wrapper.
  2. Wet the tip of your finger and wet all four edges of each wonton wrapper. This will require re-wetting your finger multiple times. The water acts like glue to hold the wrapper in place before cooking.
  3. Rotate the wonton to be in a diamond shape in front of you. It's best to rotate the cutting board the and not the wonton itself or it might tear. Fold in the two side corners so they just overlap in the middle. Use your index finger to hold those in place and fold up a third side to overlap the other two corners and form a pouch. Then roll that pouch up over the fourth side to form the egg roll. Repeat 5 more times.
  4. Spray the BBQ pork egg rolls with spray oil (we use avocado oil or olive oil). Flip them over and repeat on the other side. Place egg rolls flat in the air fryer basket. Do not stack them.
  5. Set the air fryer to 375 for 7 minutes and insert the basket with the pulled pork egg rolls. While the first batch is cooking, prepare the second batch. At the halfway mark (3-4 minutes in), remove the basket and flip the egg rolls with tongs so they brown on the other side. Re-insert the basket for the remaining time, and finish prepping batch two. When the timer pops off, remove the egg rolls and serve. Garnish with BBQ sauce (optional) or serve the BBQ sauce in small bowls for dunking. Put batch two in because these first six are going to be gone before you hit the halfway point of batch two.
